Who doesn't love easy, ready-made meals? The frozen food in the grocery store is loaded with them. But not only are they pricey but they can contain a lot of sodium (and other gunk) that may not be so good for you. I've been playing around with some "meals in a jar". This recipe can be made ahead of time and stored in a half-pint canning jar. In fact, you can make several up at a time and have them on hand for a quick breakfast for yourself or the littles. It would also be great for those summertime camping trips! Eggs in a Jar 1/4 cup Thrive Scrambled Egg Mix 1 Tablespoon Thrive Chopped Onions 2 Tablespoons Thrive Green Bell Peppers (or red) 2 Tablespoons Thrive Mushrooms 2 Tablespoons Thrive Sausage Crumbles (optional) 1 Tablespoon Thrive Cheddar Cheese (optional Layer all items in a half-pint canning jar. When ready to serve, add 1/2 cup water to your jar and shake well. Spray a LARGE coffee mug with cooking spray and pour egg mixture in. Microwave 30 seconds and stir. Return to microwave for and cook for one more minute. My notes: This was a really fast breakfast and was packed with protein. Modifications that I would like to try next time would be to replace the Green Bell Pepper with the Thrive Broccoli (crushed between my fingers slightly while putting it into the jar) and replacing the Sausage Crumbles with more Cheddar Cheese (because I love cheese!). I will let you know how it turns out but I think that this recipe can be modified to whatever you enjoy. I also think this would be excellent in a tortilla with a little hot sauce.
