Delicious Pumpkin Bars

I have a recipe for pumpkin bars that is perfect for this time of year.  These pumpkin bars are quick and easy and are meant to be shared.  Use your own pumpkin puree or store-bought and be sure to top them with a cream cheese frosting.  Yum!

Ingredients:
2 cups all purpose flour                                                           1 teaspoon baking soda
2 teaspoons ground cinnamon                                              4 eggs
1/2 teaspoon salt                                                                        1 (16 oz.) can solid packed pumpkin
1 2/3 cup sugar                                                                           1 cup chopped pecans (optional)
1 cup vegetable oil
2 teaspoons baking powder

Heat oven to 350°F.  In a bowl, stir together flour, baking powder, cinnamon, baking soda, and salt and set aside.  In a mixer bowl, beat together eggs, pumpkin, sugar, and oil.  Add the flour mixture and beat well.  Stir in 1 cup of pecans.  

Spread in an ungreased 15x10x1 inch baking pan.  Bake for 25 to 30 minutes or until pick inserted in center comes out clean.  Cool on a wire rack.  Frost with cream cheese frosting when completely cooled..  Sprinkle with additional chopped pecans if desired.  Cut into squares.  Makes 24 bars. 

Cream Cheese Frosting

Ingredients:
1 stick butter, softened                                                                4 cups powdered sugar
8 oz. cream cheese                                                                       1 teaspoon vanilla

Mix all ingredients together until creamy.  Spread on Pumpkin Bars when they have completely cooled.
