Why Our Farm Focuses on Real Food
At Glass Farm Greens, our passion for growing and preparing wholesome food became even more personal about a year ago.
Following pancreatic surgery, Farmer Dave was diagnosed as diabetic. Like many families facing an unexpected health challenge, we were suddenly confronted with the importance of the food we eat every day. It became clear that if we wanted to support our health, we needed to rethink some of our habits in the kitchen.
Over the past year we have gradually shifted toward a lower-carbohydrate, whole food approach to eating, focusing on simple ingredients and traditional foods. We believe in progress over perfection, and along the way we have experienced many positive benefits from this change.
That journey sparked a deeper interest in learning about ancestral nutrition and traditional food preparation. In October, I began studying through Kiltz Health, and earlier this year I completed my training and earned my Kiltz Health Certified Coaching Certificate.
The knowledge gained through this program continues to influence the direction of our farm. Our goal is not to tell anyone how they should eat, but rather to help provide foods, recipes, and ideas that make it easier for families to prepare nutritious and delicious meals at home.
